Stir-Fry Chicken & Peppers RECIPE

This is an excellent recipe I found online recently. The lemon peel really adds flavor and the rice is so much better than just plain rice!

Stir-Fried Lemon Chicken

2 tsp cornstarch
1/4 tsp + 1/8 tsp ground ginger, divided
4 tsp soy sauce
1 Tbsp chicken broth or sherry
1 Tbsp lemon juice
1 1/2 lbs boneless skinless chicken breasts, cut into 1/2 inch strips
1 1/2 tsp grated lemon peel
6 Tbsp vegetable oil, divided
1 1/4 c. uncooked long grain rice
2 1/2 c. chicken broth
1/4 tsp salt
1/8 tsp pepper
1 md red pepper, cut into 1/4 inch strips
1 md green pepper, cut into 1/4 inch strips
2 green onions, sliced

In a large bowl, combine cornstarch and 1/4 tsp ginger. Stir in soy sauce, broth or sherry and lemon juice until smooth. Add chicken and lemon peel; toss to coat. Refrigerate for 30 minutes.

Heat 2 Tbsp oil in a large saucepan over med-high heat. Add rice; cook & stir for 5 minutes or until rice begins to brown. Add broth, salt, pepper and 1/8 tsp ginger. Bring to a boil. Reduce heat; cover and cook for 20 minutes or until rice is tender.

In a large skillet or wok, stir-fry peppers in 2 Tbsp oil until crisp-tender. Remove from skillet and keep warm. In the same pan, cook chicken mixture in remaining oil until chicken juices run clear. Stir in peppers and onions. Serve with rice.

Ice Cream

I scream
You scream
We ALL scream
For ice cream!!

I absolutely LOVE ice cream! It's my favorite dessert. So cool and refreshing! So many different flavors!

My current favorite flavors are:
Cappuccino Chunky Chocolate (made by Braum's)--so perfect, with large chunks of chocolate...I will cry if we move to a city/state that doesn't have a Braum's b/c I will miss this flavor so much!
Super Fudge Brownie (made by Blue Bunny)--very chocolatey
Mint Chocolate Chip (made by Blue Bell)--very refreshing

Other excellent flavors are the ones with cookie dough, peanut butter swirled with fudge or caramel swirled with chocolate/fudge.

What are your favorites?

My other absolute favorite desserts are:
apple crisp with vanilla ice cream
really fudgy moist brownies with vanilla ice cream
Oreo ice cream dessert--which consists of vanilla ice cream spread over a crust made out of crushed Oreos and topped with a really excellent thick fudge sauce

Jeep!

Meet our 2004 Jeep Wrangler Rubicon.



Craig wanted to name her after an infamous female outlaw but after watching the movie "Monty Python and the Holy Grail" for like the 100th time he decided to name her "Zoot" after a character in the movie.



Craig has dreamed of owning a Jeep ever since he was 5 years old or younger (when he was 5 he wanted a CJ-5, when he was 7 he wanted a CJ-7). Just over a year ago, that dream came true.

She is our baby right now. We feed, clothe and bathe her--haha! We have given her a bikini top, waterproof seat covers, a steering wheel cover and heavy duty floormats. She will get more improvements over time as we can afford it. Fun!









On her first adventure (a Sunday afternoon about 2 weeks after we bought her), she got stuck in some deep mud and she was REALLY stuck good! It took over 6 hours of hard labor, problem solving, phone calls and prayer before we got her out. What finally pulled her out of there were 2 Jeeps (one with a winch and the other with a tow strap). Whew!









Her next adventure was showing off her skills in the mountains of Colorado (Ouray area). We hit trail after trail all day every day for 4 days, just stopping at night to camp. The scenery was amazing and so was the ease with which she climbed the narrow mountain roads and large rocks! You go girl!

Jiminy Glick - Audio Clip

Martin Short dresses up in a fat suit and plays the host Jiminy Glick on the TV show "Primetime Glick" on Comedy Central. Let me tell you, he is hilarious as that character! He is constantly raising and then lowering his voice, falling out of his chair, stuffing his mouth full of donuts or candy, hitting his guests with his rolled up notes, forgetting the names of his guests or acting like he's never seen any of their movies or shows and talking about his fake family.
